		<description><![CDATA[Hey Radish - You can definitely use soy milk in place of the milk/cream as I&#039;ve done that quite often in the past with soups like this one when I&#039;m out of cow&#039;s milk but have soy on hand.  My only hesitation is how to eliminate the butter for caramelizing the onions...I&#039;ve only ever used butter but maybe you could try something like walnut oil instead.  If you do try that, please let me know how it turns out as I&#039;m curious.  :)]]></description>
